Earth Day Lentil Soup
Servings: 6 – 8 people
Ingredients
- 1 cup dried lentils
- 5 cups vegetable stock
- 1 tsp salt
- 1/4 cup olive oil
- 2 cups chopped onions
- 3 cloves garlic pressed
- 1/4 tsp cayenne
- 1/2 cup bulgur or wild rice
- 1/4 cup chopped parsley
- 2 cans diced tomatoes 12 oz
- 1/4 cup tomato paste
- 2 cups fresh spinach coarsely chopped
- 1 pinch dried rosemary
- salt & pepper to taste
Instructions
- Rinse the lentils, then bring to a boil in the vegetable stock. Reduce the heat and simmer for 40 minutes.
- Meanwhile, heat the olice oil in a heavy soup pot. Sauté the onions until translucent. Add garlic, cayenne, bay leaves, and raw bulgur. Stir the mixture on medium heat until onions and bulgur are lightly browned.
- Mix in the parsley, tomatoes, and tomato paste.
- Pour the lentils and their liquid into the soup pot with the onions and bulgur. Simmer the soup for 15 minutes. Add a pinch of dried rosemary, salt and pepper to taste.
- Just before serving, stir in the spinach and let wilt in the hot soup.
- Garnish with fresh parsley!
