Earth Day Lentil Soup

Servings: 6 – 8 people


  • 1 cup dried lentils
  • 5 cups vegetable stock
  • 1 tsp salt
  • 1/4 cup olive oil
  • 2 cups chopped onions
  • 3 cloves garlic pressed
  • 1/4 tsp cayenne
  • 1/2 cup bulgur or wild rice
  • 1/4 cup chopped parsley
  • 2 cans diced tomatoes 12 oz
  • 1/4 cup tomato paste
  • 2 cups fresh spinach coarsely chopped
  • 1 pinch dried rosemary
  • salt & pepper to taste


  • Rinse the lentils, then bring to a boil in the vegetable stock. Reduce the heat and simmer for 40 minutes.
  • Meanwhile, heat the olice oil in a heavy soup pot. Sauté the onions until translucent. Add garlic, cayenne, bay leaves, and raw bulgur. Stir the mixture on medium heat until onions and bulgur are lightly browned.
  • Mix in the parsley, tomatoes, and tomato paste.
  • Pour the lentils and their liquid into the soup pot with the onions and bulgur. Simmer the soup for 15 minutes. Add a pinch of dried rosemary, salt and pepper to taste.
  • Just before serving, stir in the spinach and let wilt in the hot soup.
  • Garnish with fresh parsley!
